I will continue no matter where. Don’t feel bad about asking for support. Your work has value for us, otherwise we wouldn’t be here. You are being rewarded for the intellectual value you provide. I would feel guilty listening to your content and not rewarding you, like taking something for nothing. So, this is a two-way street. I understand people can’t give to every podcast they listen to, but generally it feels good to reward those whose work make a difference in our lives, and yours definitely does.

A lot of people read your stuff even if they don't pay you through Substack- if Substack goes down, you lose not only the money from the people paying you, but also the connections with the people who don't pay you yet.
As long as you are trying to get them to go though your own payment processor, you should also try to get non-payors onto an email list you control.
If substack bites the dust I've got your back on whatever else. Subscribestar would be good, but your website is fine too if you prefer it that way. Just that most "retail" payment processors like paypal and stripe are vulnerable to cancellation so they can be sketchy too.
Substack have found a bit of magic by getting the right people to use their platform at the right time but this is just the most convenient way to support your work, there will always be a way
